Ingredients:

1 lb (450g) ground turkey

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

1/4 cup finely chopped bell pepper (any colour)

1/4 cup finely chopped zucchini

Two garlic cloves, minced

One large egg

Two tablespoons chopped fresh parsley

One teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

One tablespoon olive oil

 

Directions:

In a large mixing bowl, combine the ground turkey, breadcrumbs, grated Parmesan cheese, chopped onion, chopped bell pepper, chopped zucchini, minced garlic, egg, fresh parsley, dried oregano, salt, and black pepper.

Mix well until all ingredients are evenly incorporated. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

With damp hands, form the turkey mixture into meatballs about 1.5 inches in diameter, and place them on the prepared baking sheet.

In a non-stick skillet, heat the olive oil over medium heat. Add the meatballs in batches and cook for 2-3 minutes per side until lightly browned. This will help seal in the flavours.

Transfer the partially cooked meatballs back to the baking sheet and place them in the preheated oven. Bake for 15-18 minutes or until the meatballs are cooked through and reach an internal temperature of 165°F (74°C).

Remove the meatballs from the oven and let them rest for a few minutes before serving.
