Ingredients:

1 ear corn, husk and silk removed, cut into 2-inch rounds

8 ounces (227 g) red potatoes, unpeeled, cut into 1-inch pieces

2 teaspoons Old Bay Seasoning, divided

2 teaspoons vegetable oil, divided

¼ teaspoon ground black pepper

8 ounces (227 g) large shrimps (about 12 shrimps), deveined

6 ounces (170 g) andouille or chorizo sausage, cut into 1-inch pieces

2 garlic cloves, minced

1 tablespoon chopped fresh parsley

 

Instructions:

Preheat the air fryer to 400ºF (204ºC).

Put the corn rounds and potatoes in a large bowl. Sprinkle with 1 teaspoon of Old Bay seasoning and drizzle with vegetable oil. Toss to coat well.

Transfer the corn rounds and potatoes on a baking sheet, then put in the preheated air fryer.

Bake for 12 minutes or until soft and browned. Shake the basket halfway through the cooking time.

Meanwhile, cut slits into the shrimps but be careful not to cut them through. Combine the shrimps, sausage, remaining Old Bay seasoning, and remaining vegetable oil in the large bowl. Toss to coat well.

When the baking of the potatoes and corn rounds is complete, add the shrimps and sausage and bake for 6 more minutes or until the shrimps are opaque. Shake the basket halfway through the cooking time.

When the baking is finished, serve them on a plate and spread with parsley before serving.
