Portobello Mushroom Pizzas

Ingredients:
Four large Portobello mushrooms
1 cup pizza sauce
1 ½ cups shredded mozzarella cheese
1 cup cherry tomatoes, halved
1/2 cup sliced black olives
1/4 cup finely chopped red onion
1/4 cup fresh basil leaves
One tablespoon olive oil
Salt and pepper to taste
Directions:
Preheat the oven to 400°F (200°C). Clean the Portobello mushrooms by gently wiping them with a damp cloth. Remove the stems and scrape out the gills using a spoon to create a hollow space in the mushroom cap.
Be careful not to break the mushroom. Brush both sides of the mushrooms with olive oil and place them on a baking sheet, cap side down. Season with salt and pepper.
Bake the mushrooms in the preheated oven for 10 minutes to partially cook them. Remove the mushrooms from the oven and carefully drain any excess liquid that may have accumulated in the caps.
Spoon a generous amount of pizza sauce into each mushroom cap, spreading it evenly. Top each mushroom with shredded mozzarella cheese, cherry tomato halves, black olives, and chopped red onion.
Return the mushrooms to the oven and bake for 10 minutes or until the cheese is melted and bubbly. Once cooked, garnish the Portobello mushroom pizzas with fresh basil leaves.
