Mexican Cauliflower Rice Skillet

Ingredients:
One medium head cauliflower, riced
One tablespoon olive oil
One small onion, finely chopped
Two cloves garlic, minced
1 red bell pepper, diced
One green bell pepper, diced
1 cup corn kernels (fresh, frozen, or canned)
One can (15 oz) black beans, drained and rinsed
One can (14 oz) diced tomatoes with juices
One tablespoon chili powder
One teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper to taste
1/4 cup fresh cilantro, chopped
Lime wedges for serving
Avocado slices for serving
Directions:
Prepare the cauliflower rice by removing the leaves and stem from the cauliflower. Cut it into florets, then use a food processor to pulse them until they resemble rice.
Set aside. Heat the olive oil over medium heat in a large skillet or pan. Add the chopped onion and garlic to the skillet.
Sauté for 2-3 minutes until they become translucent and aromatic. Stir in the diced red and green bell peppers and corn kernels.
Cook for another 5 minutes until the peppers are slightly softened. Add the riced cauliflower to the skillet and mix well with the other vegetables.
Pour in the diced tomatoes with their juices and add the drained black beans. Stir everything together. Season the mixture with chilli powder, ground cumin, paprika, salt, and pepper.
Adjust the seasoning according to your taste preferences. Cover the skillet and let the cauliflower rice mixture simmer for about 10 minutes, stirring occasionally, until the cauliflower is tender.
Once the cauliflower is cooked, remove the skillet from the heat and stir in the chopped cilantro.
