Lemon Herb Grilled Shrimp

Ingredients:
1 pound large shrimp, peeled and deveined
Two tablespoons olive oil
Two cloves garlic, minced
One lemon, zested and juiced
1 tablespoon fresh parsley, chopped
One tablespoon fresh cilantro, chopped
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
Salt and pepper to taste
Wooden or metal skewers
Directions:
In a large bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, chopped parsley, chopped cilantro, dried oregano, dried thyme, salt, and pepper.
Mix well to create the marinade. Add the peeled and deveined shrimp to the marinade. Toss the shrimp until they are well-coated.
Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes, allowing the flavours to meld.
If you use wooden skewers, soak them in water for about 20 minutes to prevent them from burning on the grill. Preheat your grill to medium-high heat.
Thread the marinated shrimp onto the skewers, leaving a little space between each shrimp to ensure even cooking.
Place the shrimp skewers on the preheated grill and cook for about 2-3 minutes per side or until the shrimp turn pink and opaque.
Once the shrimp are fully cooked, remove them from the grill and transfer them to a serving platter.
