Ingredients:

2 medium-sized zucchinis

1 cup breadcrumbs (preferably panko)

One teaspoon paprika

Two large eggs, beaten

Cooking spray or olive oil for greasing

 

Directions:

Preheat your oven to 425°F (220°C). Grease a baking sheet with cooking spray or a light coating of olive oil. Wash the zucchini and cut them into thin fry-like strips.

You can leave the skin on for added texture and nutrients. In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper.

Mix well to create a seasoned coating for the zucchini fries. Dip the zucchini strips into the beaten eggs, ensuring they are evenly coated.
